The holidays are the best time to indulge and enjoy delicious food and wine with our favorite people! I know for some, hosting can be scary, especially if you’re not sure what to pair with certain wines, such as Port. I’ve created a recipe that can be used as either an appetizer for a get together, or how I used it – as an after dinner sweet and savory treat.
This baked brie with fig and bacon is super easy! Even if you’re not quite Martha Stewart, you’ll be able to pull this pairing off – trust me! Plus, your friends and family will be extremely impressed because the end result looks beautiful.
Let’s talk a little bit about Fonseca BIN 27 Reserve Port. This is one of my favorite Ports to keep around and serve during the holidays because a.) it’s delicious b.) it’s a crowd pleaser and c.) it’s affordable ($19.99)! I made this brie recipe to be both sweet and savory which pairs so perfectly with this ruby-style Port wine!
Ok, let’s get into the steps! Put that apron on and let’s get to cooking.
Baked Brie with Fig and Bacon
Items You’ll Need:
- One round of brie (I prefer a double or triple cream)
- One jar of fig jelly
- One pack of frozen puff pastry sheets (you’ll use one sheet)
- Three pieces of bacon
- Quarter of a handful of candied walnuts
- Coconut oil or butter to brush outside of dough
Step 1:
Take out puff pastry sheet. Before unfolding, allow to come down to room temperature (about 30 minutes) otherwise the dough will rip. Once defrosted, lay dough down on floured parchment paper. Roll out to accommodate your chosen brie wheel size.
Preheat oven to 375.
Step 2:
Cut brie with criss cross incisions to allow cheese to seep out. Cover the brie in fig jelly.
Step 3:
Take each side of the puff pastry and pull across the brie wheel. Cut remaining dough if needed. Lightly coat the outside with your butter or oil with cooking brush. Put in the oven for 20 minutes or until golden or you see cheese melting. Then broil for 5 minutes to brown the top.
Step 4:
While your brie is baking, cook up the bacon. Extra crispy! Allow to cool and collect grease by setting on a paper towel. Then chop up your bacon and the candied walnuts and combine together. You will use this as a garnish on top of your brie bake. YUM.
Step 5:
Garnish brie with bacon and nuts & dress your plate as desired. I used some seasonal foliage to make it pretty! Also, since I wanted this to be served after dinner, I went with a vanilla waffle cookie, but I also tried this with a rosemary cracker and it was just as good! Just depends on when you would prefer to serve it.
Step 6:
